Re ports: that's a very vague question. It all depends on what you need.
Please explain what you're running - whether this is a business or a home
PC, etc etc etc. General rule is, block all that you don't need open.

Re protocols: it isn't really a matter of blocking them. You either use a
protocol, or you don't. TCP/IP alone should suffice for most people
nowadays.
