Does anyone know if there is a way to see every program accessed, every file
viewed, every website visited, etc. on your computer even after clearing
history and without some type of key logger? Is there a file folder
somewhere with all of your PC's history?

There is no Sekrit Folder. However, someone who knows what they are
doing could get quite a bit of data off your drive. Someone with skill
using forensic software and techniques could get lots more data off the
drive.

If you tell us what you are trying to accomplish - to find out or hide -
we could give you a more specific answer.

A couple of my employees (teenagers) may have been accessing some inapproiate
websites on my store's computers and I'm trying to find out for sure, but
they were smart enough to clear the history. So, mainly I'm just trying to
look at websites visited. Thanks!

Google for "reading index.dat". You might consider having a professional
computer person come on-site and set up your security and restrictions
better to prevent future problems. I'm not saying this to hurt your
feelings in any way, just being practical.

I was going to suggest looking at the cookies. Doesn't every site place a
one that can tell you where it came from?
