If you were  Registered and logged in, you could reply and use other advanced thread options
Is there a way or a program that will stop an allowed running application
from seeing the process list or to be able to determine what applications are
currently running on that computer? Can one keep a running application blind
to what else is running?

Not really,

The only option is to enforce system policy of not being able to run any
unauthorised programs *at all* and ensure the obvious are not available to
users. Even still, a person could just open up MS word and paste in the API
to enum the process list.
