Does anyone know of a file collaboration system that encrypts files on the
server?

Not sure what you are looking for - SafeBoot Content Encryption will
encrypt files automatically for users and allow them to share them
within closed user groups? Is that the kind of thing you were looking
for?

Thank you, I'll check that suggestion out. Specifically, I'm looking for a
server-based solution that lets a closed user group work collaboratively on
files that remain encrypted all the while they're on the server.

yup, that's the whole point of SB Content Encryption - like EFS but
with better key management and sharing of data, also with leakage
protection etc.
