Hi:

I want to install a dual nic sever in between my router (Cisco 2600
series) and the inside of my newtwork that will monitor all packets for
virus, spam, etc. I know i need to create a network of some type on the
srver in order to pass the traffic through but not sure where to start.
We have several routable IP's coming through our router into different
servers on the inside, so NAT cannot be affected...

Why don't you use a device that can log traffic like a router or a
firewall via syslog? On a router just apply an access list that is set
to log or put in a firewall that is in route mode and log all traffic.
